About the Christmas holidays, we decided to give you a little recipe to make in the camper: the Christmas shortbread with royal ice cream.
To tell you the truth and for those who don’t know, these are butter shortbreads that can be flavoured with lemon, orange, or whatever, depending on your taste. This is an easy and quick recipe that your children will love to prepare!

Difficulty: Very easy!
First of all, you will need a rolling pin, cutters of your choice (star, moon, Christmas tree…) and a pastry brush.
Here are the ingredients for 50 shortbread:
Preparation:
First, take the butter out a good hour in advance to make it easier to work. Whisk together the sugars (powdered and vanilla) and egg yolk until the mixture turns frothy. Add the soft butter and cream, then mix.
In another container, mix together the flour, salt, and zest or cinnamon according to your choice. Mix the two preparations together and form a ball.
Then let the dough stand in the refrigerator for at least one hour.
Meanwhile, cook your oven at 190°C.
Dust your work surface with flour and spread the dough half a centimeter thick.
Cut your Christmas shortbread with one (or more) cookie cutter.
When finished, collect the pastry scraps, form a ball and spread it again before cutting more shortbread. So on until you don’t have any dough!
Then, beat an egg yolk and brown the shortbread with a brush so that it becomes a nice colour and shiny when cooked. Place the shortbread on a sheet of parchment paper and bake for 11 minutes.
It’s time to remove your shortbread from the oven
Let the shortbread cool on a rack.
On the one hand, prepare the royal ice. On the other hand, beat the egg white and icing sugar together by adding sugar until you get the desired texture (neither too liquid nor too thick to form the decorations easily).
Place the royal ice in a sleeve pocket and make the decorations on the cold sandblasts.
Sprinkle immediately with crystallized sugar (be careful, the royal ice dries quickly, so do it as you go, otherwise the sugar will not hold!). On the other hand, crystallized sugar must not be confused with powdered sugar: crystallized sugar has larger grains.
Finally, your little Christmas cookies are ready to be eaten! An easy and quick recipe to please the whole family!
